I think that wood is called “shell” or “quilted” maple. I once saw a piece of black walnut called “checkerboard” that looked like checkerboard squares. The old guy had a hardwood mill and sold his unique pieces for gun stock.
Yup, Quilted Maple it is. I’ve always loved the look of Quilted maple, in general I think it’s a more interesting figure for the tops and backs of guitars and mandos, than Flame/Curly Maple.

Great pics of the quilted. Quilted Maple is what I used on the back and ribs for that OM. After about 10 years, I tore the top off one day and made a new one…with different bracing. I ruined the quilted ribs and replaced them with fiddle back maple (flame). The back is still quilted though. I’ll take a picture. I always loved that tiger eye effect you get when you turn it to the light.
OM with quilted back. Couldn’t find a piece large enough for a one piece back. Reflection is kinda weird (dull) on right center–taken with flash. Rosewood binding and the unmatching flamed ribs.

Here’s the back of my accoustic bass guitar made by a friend–who’s holding it in his shop. Center third of back is quilted.
