One.
Two fingers in lower 8ve except for triplets. One finger in 2nd 8ve.
Lower octave - two (one makes it jump to 2nd 8ve), but only one for tight GFE triplet.
Upper octave - one or two depending on tonal variation desired. Using one and then two in a 2nd octave G roll adds a slight crescendo effect, moresoe if coupled with lifting it off the knee half way through.

Depends on chanter. Depends on octave. Depends on desired effect.
I have one or two fingers off the chanter for the upper octave g, one for tight playing but two mostly…and two to 4 on lower octave depending on effect I want and speed of the tune, transitions, etc. If I plan to have more thatn two off, which is often, the chanter is off the popping strap. I play my rolls on lower G with three fingers off by habit and I don’t know why. Sometimes I irritate myself when I do this but at other times it seems right.

Difficult to do so as there are probably 5 or more different ways I’ll roll on lower octave G depending on tune and effect needed…even depending on my mood…which dictates the tunes I may play on any given day. also depending onm a short or long roll.
