best gouge

Hi

Wondering what is the best gouge for paring slips that NPU sells..? Do I need 2 different sizes or just one? Which size if only one gouge?
Are they long enough that the handle does NOT hit the end of the shooting block before making a full cut?

If not, where can I get the proper size gouge.?

Any other per tenant info be nice.
