I own a lot of gouges but it appears all of em in my collection are way to deep for reed making. I was curious what in-cannel and out-cannel gouges would be ideal for making reeds on a concert pitch set(both chanter and regs). I’m mainly interested in Pfeil and Two Cherries stuff as it’s easier to buy domestically.
I use a Two Cherries #8 (5108-18) for all my double reeds (wide/narrow bore & regs). Originally, this gouge was out-cannel but I reground it.
With a little practice and a good sharp edge, I can now get the cane to the required thinkness, with a nice even finish, requiring the minimum of sanding. I’ve even managed to make a few reeds that required no sanding (other than the V).

I would check with Tim Britton,
He has 14mm incannel Dastra gouges with a #4 sweep in stock that he regrinds and sharpens himself so that they are perfectly symmetrical the curve of the cane.
