Wanted: cookies recipe

As a French family, we don’t know how to make typical anglo-irish-scottish-american cookies.

Any idea about it?

Which kind of cookies? Chocolate chip? Peanut butter? Something else? It really depends on what kind of cookies, because they’re all so different. :slight_smile:

My favorite is kind of weird. Since I am a college student and live in a dorm room, it is simple.

Here’s what I do when I make cookies.

I go out to the store and buy a basic pre-made bag of chocholate chip cookie mix. I prepare the mix as per the directions, then I add shredded coconuts, M&Ms, and mixed crushed nuts to the mix, and bake them. Right before they are done, I put a mini-chocolate bar in the center and let it melt.

While they’re still hot, I spray whipped cream on them and sprinkle them with chocolate chips and more shredded coconut. Then I eat them in a bowl with ice cream and chocolate syrup and sometimes bananas or pineapple.

It’s really rich, and really fattening, but really good.

For those with the book, it’s the peanut butter cookie recipe from Joy of Cooking.

All the measurements are American-style. I hope you can find enough information on the internet to do the conversions you will need, or can get a set of American measuring cups and measuring spoons.

my mother is THE cookie baker around here - it’s not surprising to find her entire dining room table covered with different types of cookies, and she’s managed to burn out 4 elements in her stove since she moved into her apartment!

And, of course, there’s always the recipe on the back of Nestle Tollhouse Chocolate Chips (and the argument as to whether there should or should not be walnuts in them).

Here’s one of my favourites, and it’s not just because I’m an Abernethy:

Ingredients:
8 oz plain flour
3 oz caster sugar (granulated will do)
3 oz butter
Half a level teaspoon baking powder
Half a level teaspoon of caraway seeds
One tablespoon milk
One standard egg

Method:
Sift the flour and baking powder and rub in the butter until it is thoroughly mixed. Mix in the sugar and caraway seeds and then add the egg and milk to make a stiff dough.
Roll the mixture on a floured surface until it is the thickness required for a biscuit/cookie. Cut out with a three-inch plain cutter, rolling the trimmings to make more, as required. Prick the top of the biscuits with a fork and place on greased baking trays (cookie sheets) and bake in a pre-heated oven at 375F/190C/Gas Mark 5 for ten minutes until golden brown. After they have cooled, store in an airtight tin (unless you can’t resist eating them all immediately!)

I take the additional step of putting the caraway seeds through a brief morter-and-pestal treatment so they disperse more flavour into the cookies and, of course, look less like ants or weevils.

These are really easy to make. They go by many names, like oaties or cow pats (merde).

2 cups white sugar
½ cup butter
½ cup milk
½ cup cocoa
pinch salt

Boil above for 5 mins then add:

1 tsp vanilla
3 cups oatmeal
1 cup coconut

Stir

While hot, drop by spoonfuls onto waxed paper. Let cool.

Consume.

This is more of a candy than a cookie, but it is very tasty and actually good for you, at least in small quantities. :slight_smile:

Milk’n’Honey Chews

1 cup smooth peanut butter. (can probably use chunky if you wish)
1 cup honey
2 cups (more or less) Instant Non-Fat Dry Milk (be prepared with up to 3 cups - you want enough to make it very stiff)

NOTE:any brands will work, and since the proportions are so simple : 1 part peanut butter, 1 part Honey, 2 parts (+or-) instant dry milk, you can vary the batch size pretty easily.

Warm the peanut butter and honey in a pot on the stove, over medium-low heat, stirring frequently, until the mixture is nearly liquid. (you can also soften it in a microwave, but do it in small intervals so you don’t over-heat it)

Remove from heat.

Stir until smoothly blended.

Add the powdered milk slowly, a small amount at a time, stirring to blend till smooth, adding more until you have a very stiff consistancy.

Pour out onto a paper lined cookie sheet and spread out the mixture till it is about 1/4 inch thick over the whole batch.
OR - Take teaspoon sized sections and roll, placing on the paper lined tray or cookie sheet.

Let sit to stiffen. (chilling will help it set up faster.)

Cut into rectangles about 1/2 inch X 2 inches.

Refrigerate unused portions.

NOTE: If your candy is too soft, you didn’t add enough dry milk. You’ll just have to keep experimenting with more batches till you get it “right”. (Surely you can find someone willing to eat the “failures” :laughing: )

Opotional: You can also roll these in cocoa powder, coconut, ground nuts, or other small coatings if you like.

You can add cocoa from the beginning, if you want chocolate chews.

A touch of ginger is nice, too… any flavor that will work with peanut butter is viable.

Like cheddar? Actually, provalone is my fave, but I haven’t found a skim-milk version that is provalone-flavoured, yet.

When you say “Instant Non-Fat Dry Milk” do you mean skim-milk powder? If I used stevia for sweetening, what would I use to make up for the liquid and stiffness of the honey?

I’ve not tried peanut butter and cheese together. Hmmm…

I suppose that skim-milk powder would be the same as instant non-fat dry milk.

As for substituting stevia for the honey. No, it would not work. The honey is essential for both the flavor and the consistancy. Otherwise, it would hardly be ‘Milk and Honey’ candy. :slight_smile:
