Now correct me if I’ve gotten the wrong impression, but it sounds to me like there are lively ITM sessions happening in the Chicago area every weekend. Is this a fact? If some St. Louis folks were to think about a road-trip up there on a weekend, would anyone care to offer advice on where to go to hear some good music? Or is the music to be found only on certain weekends?

There are multiple sessions all over town every Sunday, running from about 2:30PM to midnight. There are at least half a dozen others running during the week, and that does not include the suburbs. Visit http://www.thesession.org and search their directory of sessions for info.
There are no pub sessions on Friday or Saturday nights, however, so plan accordingly. Many people come here hoping to find a bit of trad on a Saturday night and instead run into ballad singers. You may want to delay your return trip until Monday or Tuesday.
