the live version of “the mason’s apron” from the chieftains album and an irish evening.. features matt mollow doing this incredible solo for about five minutes. does anyone know what exactly he is playing that on?

You mean what type of flute he plays? If so pop over to the flute forum, I’ll bet David Migoya or someone else over there will know

Matt Molloy has recorded with D, Bb and Eb flutes. My guess is that he uses a D for that. When I have seen him with the Chieftans he has two flutes, a D and Bb. He usually uses the Bb for slower soulful stuff such as his seafaring jigs on The Heathery Breeze album. See the interview with him.
