As long as we’re posting recipes, I’ll share one of my favorites. This one’s VERY EASY, very tasty, and appropriate for the holidays:
Pumpkin Cheesecake
1 can pumpkin
1 pkg. cream cheese (8 oz.)
1/4 tsp. vanilla
3 eggs
3/4 cup sugar
1/2 cup Bisquick
1 1/2 tsp. pumpkin pie spice
Beat all ingredients together until smooth. Pour into greased pie plate and bake at 350 for 45 minutes or until center is dry.
