In the past, I don’t remember people quoting entire posts, as much as they are, now. I have seen recent threads in which the initial poster posts, and then the first reply quotes the entire previous message. What am I missing? Is there a reason for completely showing a previous post in its entirety, now just smaller, only then to find the reply as just a few words long, such as “Yeah, I agree with you”? Or is this just the way people like to do quote, anymore?

Yes, check the FAQ, in the “Using BB codes” section. Basically, whatever you want to quote, you have to enclose the text in quote tags like this:
Quoted text goes here…
which, in your final message will end up like this:
Quoted text goes here…
Note the SLASH-quote thing in the ending tag (ie. the two tags are not identical).
When you click on “quote” when replying to a message, the text box you write your message in will already have the quoted text in it, enclosed in quote tags. Simply delete the parts of the original message you do not want to keep.

It’s easy enough. After you hit the quote button at the bottom of the message you’re quoting and go to the reply screen, use your mouse to highlight those parts of the quote that you DON’T want to repeat. Then hit the delete key, leaving only the relevant part on which you’re commenting.
As for John’s first question, I suspect that people quote entire posts for the simple reason that no one ever told them how NOT to do so. It’s far worse on the genealogy message lists. Sometimes you’ll see four people in a row quote the entire message they are replying to. And the initial message itself mat be 100 lines long. Multiply 100 by 5 and add 20 more in each generation and it gets really bad. At least here someone can comment on it. On the Rootsweb lists your only real choices are to put up with it or unsubscribe.

And toss in a line break to separate.

I normally don’t quote an entire post. If and when I ever do, it’s because I am responding to the entire thing on a diverse thread, and need to make clear what I’m responding to.
In heated discussion it’s best to use a complete quote. This way, the person being quoted can’t go back and edit his/her post and change their story.

Yeah Mack, but sometimes you need to deal with an issue head-on so it’s best to have all your information straight. How would you like to respond to a post only to have the person re-word it, making your reply look less than credible?
