Something I can actually help in! Yay! I’m something of a fan of Galician music… I know of a few Galician and Asturian websites with sheet music for the Gaita Gallega and Gaita Asturias - I have no idea how ‘Galician’ they really are. (Some titles are in English - something of a clue…)
La Reina del Truébano
Hevia, Parrado y Aragon (Go to the Library. They have at least one Galician one, I think)
Banda Gaites Xacara (Select Partituras, and below the text box, click Descargar Partituras)
Real Banda de Gaitas (Again, click Partituras)
Banda de Gaitas Zarapallada (You have to download a program called Encore or something for this one - He provides a link to download it at the top)
Asociacion y Banda de gaitas Axouxere (Again, under Partituras)
Airinos de Fene (Same thing, also requires Encore)
Banda Gaites Llariegu (Doesn’t have any sheet music, but it has a list of songs under Repetoire that you might be able to find with tune finders.)
I found a lot more by searching Google for Partituras and Partitures combined with Gaita, Gallega, Asturia, Galicia and other keywords. (I would post them so you wouldn’t have to bother, but it’s getting late for me.) I hope these are useful to you! 
www.gaitero.de has some of them. It’s a site in German, but you should be able to find them easily.
This is the most important group about galician music here in Spain. You can ask there for everything about it.
