Since the website Scoiltrad is now defunct, would it be improper to trade or share any of their lessons with those who might want to? I don’t think it violates any copyright if the organization no longer exists. What about putting the lessons on a piping website or giving to attendees at a tionol?

FYI: Intellectual copyrights survive company failures and bankrupcy. Whomever applied and received copyrights on the material, would clearly still enjoy legal copyright protection benefits. Though the holder can certainly agree to give away copyright material pro bono.
The operation did go through receivership and, effectively, is in the hands of a liquidator - they are the new owner.
