Cornelius Ward, Signor Monzani’s foreman was presented with a medal, I think it was, as acknowledgement by his fellows that he was the finest worker among them.
The keys on my ivory flute show his outstanding ability ,I believe.

does a flute with hand forged keys play better than one with cast keys?

It should certainly last longer, feel better and look better.
Good keys are likely to be fitted better work more smoothly & not tend to have any side play over the centuries.
